Warrakilla Fine Foods produces beautiful baked goods and tasty condiments.
Lina and Giovanni Frada are Warrakilla Fine Foods, and with the assistance of two part-time helpers bake their products in their McLaren Vale commercial kitchen. Most of the herbs and vegetables used are home-grown.
Lina’s recipes change due to demand or her inspired imagination, but the following products remain constant:
- Pies: chicken, mushroom and leek; beef stroganoff; curried lentil, spinach and pumpkin.
- Pasty: mixed vegetables with cheese, beef and spinach.
- Sausage roll: pork, apple, onion and sage.
- Puff pastry parcels: ricotta, spinach, pumpkin and sage; roast veggies with chutney, ricotta and cheese.
- Tarts: leek and gorgonzola (family size available); olive, tomato and glazed onions; egg and bacon.
- Quiches: chicken and sweet potato with rice crust; sweet potato and asparagus with ricotta and spinach base; baked ricotta, glazed onions, pesto and roast capsicum; potato and leek.
- Sweets: white chocolate or rum and raisin cheesecakes; Portuguese custard tarts; vanilla and sherry slices; fig, hazelnut and almond torte.
- Biscuits: angel wings (Italian crostoli); vanilla and walnut.
- Gluten and lactose-free: brownies; almond and orange muffins.
- Gluten-free biscuits: Greek almond and egg white; walnut and almond.
The Warrakilla Fine Foods range of condiments includes mustards (horseradish; basil; sundried tomato), jellies (mint and garlic; sage and cider; mint and rosemary), cider vinegars (raspberry; horseradish) or vinaigrettes (sage with dill; basil – made with white vinegar).
Warrakilla Fine Foods also produce tasty jams (raspberry; strawberry; cointreau with lemon, orange, grapefruit), delicious home-made tomato sauce, and sundried tomatoes in oil.
