Lina Verilli and Pat D'Onofrio’s farm on the Gawler River produces a wide range of seasonal, pesticide-free vegetables. Over 100 different lines throughout the year and all grown outdoors.
To keep their Patlin Gardens’ soil as fertile as possible Pat and Lina use organic manures, compost, seaweed extract, and rotational and companion planting.
This garden is also the source of their delicious extra virgin olive oils. Their 2000 tree grove produces oil from different olive varieties and also supplies the fruit for Pat and Lina’s traditional salt-treated olives which are dressed with oregano, garlic and chilli from their garden.
Lina makes a concentrated chilli sauce from jalapenos. Its preservative free and flavoured with garlic, cumin, oregano and ground coriander. Available all year until sold out.
Another delicacy is the passata with tomatoes, basil and salt – excellent as a pizza base or as a sauce for pasta and casseroles.
