Adelaide Showground Farmers Market Issue 60, November 2011

Issue 60, November 2011

Seasonality with CEO Amanda Daniel

True South Australian spring is here.

Buying local pristine produce with a minimum of cooking is the secret to a glamorous carefree diet. In spring creamy cheeses are creamier as the grasses are richer and more nourishing. Fresh peas and broad beans are sweet and sought after in their short season. Apricots and white peaches, cherries and strawberries are on their way as the sun shines and the weather warms up. Local wild scallops and sustainably farmed mussels will be in great demand as everyone gears up for summer entertaining. Award-winning prosciutto made from black pigs makes putting simple platters together too easy.

We eat according to the seasons as our lives keep in touch with our environment. Eating seasonal, local food fosters traditions and rituals, building communities. This Market tells the story of the season and connects us to the land as the soil and climate provide for us. Our local farmers bring produce from regional South Australia, providing a geographic profile of nutrition and local culture.

Our passion for local, seasonal food, and supporting primary industry was the topic of conversation at the Festival of Ideas this year. As the global population brims over 7 billion, the importance of sustainable farming, land use and food policy is being realised. Growth in this century is being defined by sustainability. Adelaide Showground Farmers Market is increasingly relevant, granting a lifestyle choice for shoppers, farmers and small producers.

Farm Gate magazine is being launched here on Sunday 20 November by co-author, Dianne Mattsson, who is The Advertiser’s food writer. This beautiful, affordable publication is a guide to seasonal South Australian farmers’ produce. This glossy magazine will be released annually, to keep it relevant and is available at the Information tent at the Market. That is one Christmas present idea - add one ASFM membership and you’re done!

Dianne Mattson is also a guest judge, along with Hilton Adelaide’s Executive Chef, Dennis Leslie, at our prestigious Adelaide Showground Farmers Market Awards. Voting forms are being distributed to members or you can download and print one here. Vote on the stalls that do the best work, provide the best produce and inspire you. The award ceremony is on Sunday 11th December at 11am.

The annual Adelaide Showground Farmer Awards

The annual Adelaide Showground Farmer Awards have been developed to give our members the opportunity to recognise and reward the ASFM stallholders for their quality of presentation, service and produce.

This year we are pleased to have The Advertiser food writer Dianne Mattsson to judge our new award, the Media Award.  The Media Award recognises the stallholder who most successfully tells their story.  A stall's story is told through its produce, its display information and how the stallholder engages with their customers.

We are also pleased to have a second new award this year, the Chef's Inspiration Award. Judged by the Hilton Adelaide's Executive Chef Dennis Leslie, this award recognises the stall who provides the most inspiring local, seasonal produce - the produce that inspires menus.

Voting forms will be available at the Info Tent from Sunday 13 November.  Alternatively you can download and print the form here.
Please complete and return your form to the Info Tent staff by Sunday 4 December. Winners will be announced at the Awards Ceremony to be held at the Market square on Sunday 11 December at 11am.

Making a Meal of It book promotion, Sunday 6 November

Most people hate the thought of throwing away food.  Rosemary Cadden, co-author of the book Making a Meal of It, will be in the demo kitchen at 10am this Sunday 6 November, to give tips and advice on how to keep food fresher for longer and how to "make a meal" out of food you are considering throwing away.

What to do with that one sad carrot? Making a Meal of It is a guide to making the most of the food we feel guilty about throwing away.

Bursting with tips, ideas and recipes, this book tells you how to buy the best, keep it fresh, and make use of every bit - and, when you forget, how to restore and revive. The ideas are simple and flexible, from tasty solutions for last night's leftovers to easy recipes for a bulk buy or garden harvest.

Tuck in and make a meal of it. You'll save time and money, and a bit of the planet too.

Rosemary will also be available to sign copies of the book, which will be on sale at the Info Tent for $20 for members (the book's RRP is $24.95).  Read a review of the book here, by Adelaide blogger Lamb's Ears and Honey.  To read an excerpt of the book, click here.

Sicilian Seafood Cooking book promotion, Sunday 27 November

Vogole in a pan from Sicilian Seafood Cookery
Vogole in a pan from Sicilian Seafood Cookery

Food writer and blogger Marisa Raniolo Wilkins will join us in the Demo Kitchen on Sunday 27 November at 10am to promote her new book, Sicilian Seafood Cooking.  The book contains a selection of fish recipes (pasta and mains and using sustainable fish) and vegetable accompaniments inspired by Marisa's travels in Sicily to visit family.

Here is what Marisa has to say about the book, on her blog:

"The book combines social and culinary history, personal memoir, anecdotes and folklore. It has 383 pages with 120 authentic Sicilian recipes for fish and its many accompaniments: special sauces and vegetable contorni (side dishes). My editor, Mary Trewby, has done a brilliant job ensuring that the book is logically structured and clearly laid out: first courses (in Sicily this means pasta), second-course dishes (mains), sauces, food for feasts and vegetables. Some of the contorni (side plates of vegetables) also double up antipasti.

....there are some excellent photographs of the food I cooked in my very small kitchen....the book also features a large selection of photographs of Sicily, especially of fish, fruit and vegetables in the markets of Palermo, Syracuse and Catania...

Like all true Italian cooking, Sicilian cuisine is intensely regional and where it is appropriate I have provided information about the origins of recipes. Recipes come embedded with bits of folklore, quotes from literature and personal reminiscence. There is important information about the sustainability of fish species relevant world wide, and there are a variety of fish that can be substituted in each recipe."

Marisa has also donated a signed copy of the book as a prize for members who scan on the day.

Producer of the Month – Enzo's Gluten Free

Matt Fazzari with his Dad Enzo at the opening of his stall at the Market in 2010
Matt Fazzari with his Dad Enzo at the opening of his stall at the Market in 2010

Find Enzo's Gluten Free at the Market at site 21

Matt Fazzari is no stranger to hard work.  Growing up as the son of Enzo Fazzari of Enzo's Ristorante fame, Matt started working for his father as a barrista at the age of 15.  Matt saw the long hours and late nights that go into running a business but this has not put him off starting a business of his own.

Enzo's Gluten Free has sold gluten-free bread, cakes, muffins and desserts at his stall at the Market for the past year.  Matt offers a gluten-free alternative to the wheat-based products that coeliacs love but cannot have.  For Matt, the decision to open a gluten-free business was personal.

"I'm gluten-free myself.  I found that gluten slowed me down.  If I had a sandwich for lunch, I was lethargic by about 3 o'clock," said Matt. "As an Italian, we have bread with everything, it's a staple diet! Not being able to find anything in the shops beside expensive supermarket shelf items was frustrating," he said.

For Matt, the Market was instrumental to starting the business.

"It started off small, just baking it for myself and my family," said Matt, "and now it's got bigger with the stall at the farmers market.  I wanted to start Enzo's Gluten Free to show that Enzo's Ristorante makes beautiful food, Enzo's at Home makes beautiful convenience food and now Enzo's Gluten Free can accommodate for these people that find it hard to eat wheat".

Matt sees his stall at the Market helps people by offering them a fresh alternative to the small amount of gluten-free products available.

"A lot of mothers out there thank me because now they can feed their children," he said. "When people come to the factory shop and I tell them they can have a chicken schnitzel pack with gluten-free crumbs, they buzz out!"

When asked what goes into the product, Matt said "it needs a lot of love".  Matt found it difficult to source the right flour initially but now he has found a good base flour, he has adapted to make the muffins and profiteroles that are available at the Market.

With a background in IT, Matt still helps out the family business however he is enjoying learning all the other facets that come with owning a business, such as marketing.  He has a full-time baker at his factory on Grange Road, as well as a couple of staff at the Market stall to help him out.  It is a true family business, with his brother helping out as well.

"I'm showing Dad it's a serious piece of the pie," he said.

Enzo's Gluten Free bakes fresh Fridays and Saturdays for the Free store in Unley and he will be branching out further in the near future.  The product is also available frozen during the week at the Enzo's at home stores.

Matt says that at the moment his most popular product is the chia stick with chia superseeds although he is selling out of most of his bread before the Market closes every week.  He sees that Market-goers are educated about the food they eat as well.

"People are on the ball with these sorts of things," he said, "they know about chia being a superseed".

For Matt, the benefits of eating a gluten-free bread is simple.

"It just makes you feel better," he said.

Matt is offering all ASFM members a special deal for the month of November.  Click here for details.
