Tony and Margaret Harding have been producing hand-made olive oils, seed and nut oils and condiments for more than 10 years. Established in 1996, their grove is located near Willunga, on the South Australian Fleurieu Peninsula.
The Mediterranean climate of the area and its rich, loamy soils enhance the flavour and quality of their olive oils.
The Hardings’ grove is planted with the olive varieties Manzanillo, Verdale, and Mission. Some of these oils are infused with garlic and herbs.
The olives are hand harvested into a catcher to keep the fruit off the ground and the oil is then extracted using no added water in the press to preserve the poly-phenols within the oil. Poly-phenols preserve the freshness of the oil and add important flavour compounds.
Hailing from Sri Lanka, Tony could remember the exotic oils of his childhood and so he purchased a seed and nut oil extractor and began experimenting.
Almonds, walnuts and mustard seeds are now turned into beautiful, fresh, fragrant oils that have become highly sought after by chefs and enthusiastic home cooks alike.
Today the range includes pumpkin seed, apricot kernel, hazelnut and macadamia nut oils, as well as a range of tasty condiments and spreads.
Where possible Tony’s raw nuts and seeds are sourced in South Australia.
