Chris and Mignonne Bushell farm breeding rabbit does and Damara lambs on their property at Long Plains near Mallala. They built their own slaughterhouse and value-adding processing plant there and were one of the first in Australia to add value to their rabbit meat.
Their rabbit legs are smoked using redgum and come in ready-to-eat plain or chilli flavoured.
Other rabbit products include portions, whole rabbits, rabbits marinated with red wine and garlic, gluten- and preservative-free sausages with almond and tarragon, cheese and chives, smoked or plain rabbit medallions, and rabbit schnitzels.
Their lamb is chemical and pesticide free and fed on saltbush pasture. Darmara lambs are South African in origin and don’t need to be shorn, crutched or mulesinged. This breed has a darker meat and all the fat goes to the tail so it is generally leaner in the chop and forequarter.
Lamb products include mince, smoked, various cuts and sausages with bacon added.
Young wild goats are sourced from the Flinders Ranges and are processed by Chris. There are goat cuts, sausages with herb, garlic and fennel, plus sides or wholes goats.
Pork from the Adelaide Plains is value added by the Bushell’s. The English pork sausage is a specialty. They also make spicy or plain schnitzels, kesler (bacon chop), usual cuts of pork, and redgum smoked ham and bacon. Around three pigs per week are needed to cater to Market customers.
