Sandra and Ian Pickett began making Bush Tucker Ice Cream to demonstrate the flavours of native fruit to the public, who were generally unaware of the variety and abundance on offer.
Their ice cream range includes the following flavours:

- Muntries
- Quandong
- Strawberry Gum
- Wattleseed
- Desert Lime
- Kakadu Plum
- Lemon Myrtle
- Lilly Pilly and Wild Ginger
- Mallee Honey
- Macadamia
- Illawarra Plum
- Davidson Plum Sorbet
- Sunrise Lime Sorbet
The fruits for the ice cream syrups are sourced from growers in South Australia wherever possible, and others, such as Kakadu Plum, are sourced from aboriginal businesses. Bush Tucker Ice Cream’s dairy ingredients are all South Australian.
The ice cream was originally made from the Pickett’s home with a 5 litre ice cream machine but is now made in 20 litre batches at a small registered ice cream factory.
“The Market has proved a real business incubator,” says Sandra. “Over 60% of our customers are regulars and we always seek their feedback. Over the years we adjusted our formulations in reaction to their comments.”
“The Market is our home but we also take our ice cream to selected events such as the Spirit Festival, Australia Day Celebrations, Taste SA at the Royal Adelaide Show and the Tour Down Under.”
