Combining ancient techniques with modern research, Jonathon Trewartha produces caper products that rival the best in the world.
Jonathon and family started the first Australian caper farm, the Australian Caper Company, and have gone on to produce award-winning capers.
These capers are grown with minimal water on the dry rocky slopes of the River Murray. The tiny unopened flower buds of the caper plant are handpicked daily at first light throughout the hottest months of the year.
The caper’s tangy flavour comes from naturally-occurring mustard oil that is found throughout the plant. With the addition of a few capers to any dish, you can instantly capture the fresh, sun-drenched flavours of Spain, Italy, Provence, Greece, Morocco, Algeria and Tunisia.
These locally-grown capers are packed full of antioxidants and have natural health benefits.
“Australian capers also have a very intense taste, firmer and fresher than their imported counterpart and because they are grown by me according to sustainable principles, they avoid the high toxic residues that imported capers have been known to carry,” says Jonathon.
