Liberty Dellow decided to start Bubble'n'Squeak when she realised that there was a gap in the Adelaide catering market and she was confident she had the right idea to fill it.  Liberty had worked in a busy patisserie and watched huge numbers of people walking in the door to pick up small and large cakes for entertaining at home.  She wondered, “Where were people getting their savoury finger-foods from?”

After doing some research, Liberty realised that people did not always want to hire a catering service.  The other option, self-catering,seemed to mean using party pies from the local bakery or frozen samosa from the supermarket freezer or doing all the hard work yourself.  As Liberty says,
“We all love a samosa when we go to an Indian restaurant or from our great local takeaway, but why is it that at some functions we end up eating bad frozen tasteless versions of these items?”.
That’s when Bubble’n’Squeak was born.

Most of Bubble’n’Squeak’s foods are inspired from street food overseas.  On her website, Liberty discusses the importance of street food not just being a food for peasants but embodying the soul and culture of the area and supporting the local community:
“From a bustling fresh produce market in Sicily where people eat hot Arancini whilst doing their shopping, to people eating Vadas for breakfast with a cup of chai in the streets of India”.

Liberty describes her products as “the kind of things we have grown to love like samosas, falafels and souvlaki and also foods that follow in the shared eating style that we have adopted such as mezze and tapas”.  Along with their English name-sake dish, bubble ‘n’ squeak with pea and parmesan crème fraiche, various cuisines are represented in the finger foods, which can be purchased individually or in boxes of 30 items.  The menu includes Vietnamese Five Spice Chicken (cold rolls with lotssa herbs and dipping sauce), Italian spinach arancini with lemon mayonnaise, Indian tandoori chicken skewers, Pakistani vego samosa with tamarind curry and Greek dolmades (vine leaves stuffed with tomato and herbed rice).  Liberty has mixed international cuisine with the best SA produce, sourcing locally wherever possible.

Liberty makes the food in her home kitchen in Prospect.  She started fortnightly at the Market in February 2009 and then decided to give up the day job and go full-time in November 2009.  Demand at the Market gave Liberty the opportunity to branch out into catering in mid  2010, using her Market stall as her shop front  where people can place orders.  Orders are also taken online at www.bubblensqueakonline.com.au and food can be collected from Liberty’s home or delivered for a small fee.
